Lemon peel rolls


  • 2 kg of thick peel lemons
  • 1.5 kg of sugar
  • 4 cups of water
  • 2 tablespoons of lemon juice
  • ¼ cup glucose



As a first step we slightly scrape the lemons. We incise the peel in 4 or in 6 or in 8 slices and remove them carefully. Then we wrap them and curb them in rolls using a thread or a toothpick. Afterwards we debitter the peels by boiling them thrice, for 10 minutes each, using fresh water each time. Next we drain them.

During the next phase we boil the sugar with water for 10 minutes. We remove the toothpick (or the thread) and put the rolls in the pot with the water and sugar to boil a new for 15 minutes.  Next we let them soak in the syrup. The following day we boil them again until the syrup thickens. A little before it does we add the lemon juice and the glucose.
